What a vegan eats šŸŒ±

Hello thereĀ šŸŒ»Ā Hope you had a good weekend and that you recharged all your batteries.Ā Today I am going to share with you some of the plantbased meals I eat.Ā I usually cook all of my meals and love to spend time in the kitchen experimenting new things.Ā I moved to the UK recently and I am still exploring all the vegan products here which are a lot compared to the place I was living.Ā 

Find below my colourful meals and let me know what you thinkĀ šŸŒˆ

Breakfast

  • Oatmeal bowl with berries and green smoothie

Ā I used oat milk and added some oats and shredded coconut into the bowl, mixed it up and put it in the fridge while I prepared my green smoothie, then I just added the toppings such as blueberries, raspberry and a bit of agave syrup on top.Ā For the smoothie I used a green smoothie mix that contains kale, avocado,lemongrass and spinach. I also added spirulina powder which is incredibly high in protein and a good source of antioxidants, B-vitamins and other nutrients and also maca powder which isĀ high in minerals such asĀ calcium, potassium, iron, magnesium, phosphorus, and zinc.

  • Peanut butter toast and fruitsĀ šŸ„œ

So simple and fast to prepare. I usually toast the bread a bit and then add the peanut butter. Just used half papaya and on the side some blueberries whichĀ are packed with antioxidants that may help keep memory sharp as you age, and raspberries that contain ellagic acid, a compound with anti-cancer properties with a bit of Alpo Soya natural yogurt on top. The orange juice I bought in the supermarket and it is natural but I have stopped drinking this kind of juices since it contains lots of sugars so now I make my own onesĀ šŸŠĀ I am also really careful with the peanut butter I buy since many contain lots of sugar so I always make sure to buy organic peanut butter and to check the ingredients.

  • Paleo tapioca crepe with little lemon cake hearts and mint lemonadeĀ šŸ‹

This is one of my favorite breakfasts and so quick and easy to do.Ā Tapioca crepes are super popular in Brazil and it is really healthy, vegan, gluten free, paleo and sugar free!Ā All you need to do is to heat a medium pan on high heat until the surface is warm then add the tapioca flour and spread it out with a spoon and let it cook for about 2 to 3 minutes, add your topings and fold it like a taco. I haven’t folded mine though because wanted to take a nice picture and was afraid to ruin it hahaĀ šŸ˜‰Ā For the lemonade I used 3 lemons and added some mint to it and blended it all together.Ā The little lemon hearts were a left over from a cake I made and I will share the recipe later on.

MealsĀ 

  • Homemade vegan sushi

My favorite thing to cook is definitely sushi!Ā Back in Luxembourg it was really expensive to order sushi and when I did order it I had some bad experiences in regards to the quality so I started to buy my own ingredients. I watched some videos before and seemed really easy. The first time I made it honestly took me hours and my kitchen was a mess in the end but really worth it as we could eat sushi until we were full and there was still a lot left for the next day now that I am used to make it, it is really quick and easy. This was our New Years menu and I also made hummus and guacamole which I need to improveĀ šŸ˜œĀ For the sushi I use usually mango, cucumber, avocado, carrots and peppers. It is definitely delicious, fun and cheap!

  • Roasted sweet potato with salad

This is pretty simple but delicious.Ā This is the kind of meal for when I am feeling a bit lazy so I just cut a sweet potato in half season it with pinkĀ HimalayanĀ salt, garlic powder, parsley and sprinkle it with a bit of coconut oil and put the sweet potatoes in the oven until it’s soft.Ā For the salad I used rocket, cucumber, olives (which I completely love) and vegan feta cheese.

  • Vegan “fish” fingers

It is amazing the variety of vegan products we find nowadays and this vegan “fish” fingers really tasted like fish so I had to check the ingredients again because I couldn’t believe it. Cooked brown rice with peas, sweet potato and kale chips and a salad on the side. Couldn’t been moreĀ satisfied.

  • Vegan homemade pizza

This pizza was honestly the best pizza I ever had!Ā I bought the dough which is vegan and just had to add the toppings and I used tomato sauce of course, spinach, peppers, mushrooms, vegan cheddar cheese and once out of the oven I added avocado, rocket and walnuts. So tasty and yummy …..Ā šŸ„‘šŸŒæ
